Cupcakes and A Flourless Chocolate Cake

 Tomorrow our book club is meeting and I said I’m bringing dessert. I pulled out my worn copy of Silver Palate cookbook and made the carrot cake recipe into cupcakes.   I tried to make the frosting look like roses! Didn’t work! I also made a version of David Leibowitz’s flourless chocolate cake which is now called his “Orbit” cake formerly known as “Idiot cake” because it was so easy to make. I’ll let you know how it turns out as I’ve never made it before. Serving this with raspberries and vanilla ice cream.

 

 
Chocolate Orbit Cake with Chocolate Glaze

Chocolate Orbit Cake
from Room for Dessert by David Lebovitz
makes one 9" cake

1/2 pound butter, in small chunks
12 oz bittersweet chocolate, chopped
1 cup sugar
6 eggs

1. Preheat oven to 350 degrees F.
2. Line the bottom of a 9" round pan with parchment paper and butter the bottom and sides.
3. Combine the butter and chocolate in a double boiler.  Cook until melted.
4. In a separate bowl, whisk together the sugar and the eggs.
5. Whisk in the melted chocolate to the sugar and eggs.
6. Pour the batter into the prepared cake pan, and place this cake pan into a water bath, with warm water reaching about half-way up the sides.
7. Cover tightly with foil. (I forgot this step and ended up with a bit of a crust.)
8. Bake in the oven for 1 hour and 15 minutes, until the cake appears set and your finger comes away clean when you touch the center.
9. Remove from oven and water bath and let cool completely.

 

Chocolate Glaze

1 cup bittersweet chocolate chips

1/2 cup heavy cream

Place the chocolate in a heatproof bowl.  Heat the cream until it's not quite a simmer, but showing fine bubbles. Pour the cream over the chocolate, stir very briefly to combine and rest for 5 min. Stir again at first slowly then vigorously until the chocalate is completely melted and glaze smooth. if any bits are not melted put in microwave briefly.  Spoon the glaze over the cake,  allow to set for several hours before serving. Do not refrigerate the cake.
