I’ve been challenging myself with cooking easy meals during this hot spell and also using our garden tomatoes. This morning I thought of gazpacho. Using Ina Garten’s recipe it was a snap to make. Now it just chills til dinner.

My gourmet cook friend Rob says a proper Gazpacho required sherry vinegar or sherry. So please add and be warned this recipe makes a lot. I would definitely cut in half the next time.
