Lemon Ice Box Pie





Here's a very easy dessert recipe familiar to many homes in the 1960's. There are many variations including "Ice Box Cakes".
Ingredients:
1  (8 oz.) whipped topping
1 (8 oz.) package softened cream cheese
1 (14 oz) can sweetened condensed milk
1/2 c. fresh lemon juice
1 tsp. vanilla
1 graham cracker crust pie shell (recipe follows) Make the pie shell first and cool. Then make filling.

Pie filling: Combine whipped topping, softened cream cheese, condensed milk,  and vanilla into a mixing bowl. (I placed everything into a food processor). Blend. Add lemon juice to taste. I added 1/2 cup and it was not overly tart for our tastes.  Pour into pie crust and refrigerate overnight.

Graham cracker crust.  I used ready to mix graham cracker crumbs.
 Crust:
1 1/2 cups graham cracker crumbs
1/3 cup sugar
6 T. melted butter

Mix the above and press into a pie tin.
Bake 375 degrees for 7 minutes. Cool completely before filling.
