I tried something new for my teriyaki chicken. I made a marinade for boneless skinless chicken thighs. I marinated overnight. Then we airfried the chicken for 20 minutes. I also made a teriyaki glaze which we brushed on before we served. It worked great. Served with potato salad. Just like the aunties would make. A good recipe combo.
Teriyaki marinade:
1/2 cup soy sauce
1/2 cup brown sugar
1/4 cup mirin
1 tablespoon Worchestershire sauce
lots of crushed garlic (recipe said 2 cloves garlic)
lots of grated fresh ginger (recipe said 1 T. grated ginger) i used a good sized chunk
1/4 c. sake ( I didn't have but this would be good)
1/4 tsp. black pepper
2 tablespoon chopped fine green onions
1 tablespoon onion powder
combine all and pour over chicken. Marinate several hours or overnight best.
Recipe teriyaki glaze:
1 cup water
1/4 cup soy sauce
5 teaspoons brown sugar (add to taste more if needed)
1/2 tsp. grated fresh ginger
1/4 tsp. garlic powder or add fresh minced garlic (i like fresh and a lot)
Heat the above together in sauce pan to boil then lower heat.
add to this a cornstarch slurry
2 Tablespoons cornstarch and 1/4 cup water. mix together and add to above glaze and heat slowly and stir constantly til thickened glaze.
Brush onto cooked chicken.
