Roasted Squash Caesar Salad

 

Thank you to my neighbor Darlene who gave me this big squash grown by another excellent neighbor David.  Darlene is in the middle of remodeling her kitchen so she’s not cooking squash any time soon. I decided to bake the squash at 4:00 this morning since that’s the time I usually get up and it was cool enough to turn the oven on. I attach the recipe for “simple roasted squash Caesar salad” . Before serving I will toss in the dressing, croutons and cheese. Thanks to my friend “ Sherri"

Monday Lunch With Sherri and Ellen at the Peninsula Beach House

 People who know me well know I love hamburgers! They’re my jam!  I was invited to have lunch with my friends Sherri and Ellen.  Can you guess what was on the menu?

 

 

U.S. World Surf Competition Huntington Beach

 

We got up early and took the bus to the pier at Huntington Beach.  It was cool and not very crowded in the early morning hours. We have fun taking advantage of some free photo ops and enjoyed the special exhibits along with the Surf competitions. Lexus commissioned surf wear icon Jeff Yokoyama (Yoki shop in Newport Beach) to create some special items for its' raffle.
