Salmon with lemon Sauce and Asparagus

Serves 4
 

 Salmon:

 4 salmon filets

Lemon pepper

Avocado Oil

4 small lemons

 

Sauce:

1/2 c. salted butter

1/2 c. cream cheese

1/2 c. heavy cream

Lemon peel zest (2 tsp)

1 Tbsp. fresh lemon juice

sweeten to taste (suggested 1 1/2 tbsp. monk fruit

Asparagus:

1 bunch asparagus

1 lemon

garlic salt

Grated parmesan cheese

Directions:

1.Line large pan with foil lightly coat it with avocado oil or baking spray 

2. Place lemon pepper on top of salmon

3. Place salmon on foil and drizzle with avocado oil. 

4. cut lemon into thin slices and place on top of salmon.

5. close up foil around the salmon.

6. Bake  375 for 15-20 minutes. 

7. Open foil remove lemons and serve with lots of lemon sauce.

Lemon Sauce

1. In med sauce pan combine butter, cream cheese, heavy cream, lemon peel and lemon juice and monk fruit on low heat. Allow ingred. to soften and then mix together to combine. Cook til warm not boiling. 

asparagus:

1. Trim bottoms and place in foil lined baking dish.

2. coat with avocado oil

3. bake at 425 for 12-14 min. 

4. remove asparagus, plate and top with parmesan cheese

5. opt. squeeze lemon juice over asparagus.
