Squash Blossoms

 My neighbor  David dropped off these beautiful zucchini blossoms one morning. I said they’d go great with what I’m cooking for dinner- pasta with a Calabrian spicy sauce with Italian sausage. However, those blossoms were calling out to me so sweetly I had to make them for lunch. With no ricotta cheese on hand I stuffed them with a small amount of shredded mozzarella. For a light crispy batter I used 3/4 cup of all purpose flour and enough club soda to make a heavy cream consistency batter. (Easy and super light and crispy) . Mike says his family didn’t stuff them and I think they’d be great unstuffed too. They are so delicate. I sprinkled with a seasoned salt mixture.  We devoured them. Grazie David!
